
Banana and Dark Chocolate Muffins Recipe (for Beginners)
Besides banana bread, what else can I do with a few overripe bananas? While self-isolating at home for a few weeks, I was starting to crave something sweet and fluffy without having to leave my house. I had bananas that were browning, so I started to look around my pantry to see what I could make with them. I’m not a baker at all…the only thing I’ve ever baked were cookies from a Pillsbury mix (which didn’t turn out like cookies at all), but I’ve discovered a very easy recipe for muffins that anybody will be able to perfect!
Ingredients (for 5 large muffins)
- 2 overripe bananas
- 1 large egg
- 1 cup flour
- 1 tablespoon baking soda
- 1 tablespoon cinnamon
- 1/4 cup chopped dark chocolate chunks
- 4 tablespoon butter
- 1/3 cup white sugar (less sweet) OR 1/2 cup white sugar (more sweet)
- 2 tablespoon vegetable oil
- a pinch of salt

Instructions:
- Preheat oven to 350 degrees and coat muffin pan with either butter or non-stick spray.
- In a large bowl, mix together flour, baking soda, sugar, cinnamon, and a punch of salt.
- Add in your overripe and peeled bananas, egg, butter and vegetable oil.
- Mix continuously until the batter is smooth.
- Add your dark chocolate chunks and a pinch of salt, and mix again.
- Scoop your batter into the muffin moulds on your pan. The batter should fill almost the entire mould.
- Optional – add a pinch of brown sugar on top of each muffin.
- Bake for 20 to 25 minutes or until it passes the toothpick test (stick a toothpick in the middle of one muffin – if any batter remains on the toothpick when you remove it, the muffins are not ready yet).
- Use a small butter knife to lift the muffins from the pan, and allow them to cool for 2 minutes before enjoying!
